Lemon Baked Cod With Greens

  1. Preheat oven to 350*F.
  2. Bring a large pot of salted water to a boil. Add in the rape or kale. When the water comes back to a boil, drain and set aside.
  3. In a bowl chop and crush the tomatoes, lemon juice and add a pinch of oregano, 3 tablespoons olive oil, and crushed cloves of garlic. Mix everything together well.
  4. In a large baking pan, dribble the remaining 2 tablespoons of olive oil. Add the drained rape or kale, the olives and the codfish steaks.
  5. Pour some of the tomato mixture over each fillet and add some salt and pepper to taste.
  6. Crumble feta cheese over each fillet and bake in oven for 30 minutes.
  7. Check the fish occasionally to make sure it does not get overcooked and dry up. (It's fine if the rape or kale overcooks. The leaves will get a little crispy, but the taste will be sweeter.).
  8. Garnish the fish with lemon slices extra virgin olive oil and serve. Serves 2.
