Tex Mex Dip
- 3 medium ripe avocados
- 3 Tbsp. lemon juice
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 c. sour cream
- 1/2 c. mayonnaise
- 1 pkg. taco seasoning mix
- 2 cans bean dip
- 1 bunch green onions, chopped
- 1 can medium pitted black olives
- 1 (8 oz.) pkg. shredded sharp Cheddar cheese
- tortilla chips
- Layer on platter in this order:
- Spread bean dip on a large, shallow serving platter.
- Peel, pit and mash avocados.
- Add lemon juice, salt and pepper.
- Mix well.
- Combine sour cream, mayonnaise and taco seasoning; mix in separate bowl.
- Layer avocado mixture over bean dip, then layer taco seasoning mixture over avocado layer.
- Top with green onions, tomatoes and sliced black olives, then sprinkle Cheddar cheese over top of dip mixture.
- Serve with large, round tortilla chips.
