Baked Brisket Au Jus
- 5 lb. brisket
- 2 tsp. salt
- 1/4 tsp. pepper
- 1 large onion, sliced
- 4 ribs celery, sliced
- 1 cup brewed coffee
- 1/2 can tomato sauce
- 1/2 can tomato paste
- 1 Tbsp. Worcestershire sauce
- Place brisket fat side down in roasting pan.
- Sprinkle with salt and pepper.
- Top with onion and celery slices.
- Stir together tomato sauce, tomato paste and Worcestershire sauce.
- Pour over beef.
- Bake at 325u0b0 for 1 hour.
- Cover and bake 2 more hours, basting with juices occasionally.
- Add coffee and bake, covered, 2 more hours.
- Check every 30 minutes for dryness.
- Add 1/4 cup water if needed.
- Remove brisket from pan and let stand 20 minutes.
- Slice brisket across the grain with a sharp knife. Strain pan drippings and serve with brisket.
