Nanaimo Bars

  1. Prepare 9 x 13-inch pan with vegetable spray.
  2. Cook margarine, sugar, chocolate and vanilla in top of double boiler over simmering water until blended.
  3. Add egg; stir slowly.
  4. Cook 5 minutes; stir constantly.
  5. Add vanilla, cracker crumbs and pecans. Press into prepared pan.
  6. Chill 15 minutes.
  7. Cream margarine and Neufchatel cheese until fluffy.
  8. Add vanilla.
  9. Gradually add powdered sugar; beat until smooth.
  10. Add color; pour over cracker mixture.
  11. Refrigerate 30 minutes.
  12. Melt butter and chocolate chips in top of double boiler.
  13. Spread over cream filling.
  14. Refrigerate until firm.
  15. Cut into squares (36).
