Spicy Rice And Beans

  1. Spray a large saucepan with vegetable cooking spray. Add onion.
  2. Cook over medium heat for 5 minutes, stirring frequently. Stir in garlic and green pepper. Cook 2 minutes longer, stirring frequently.
  3. Add stewed tomatoes, broth, cumin and chili powder; bring to a boil. Add rice.
  4. Reduce heat to low.
  5. Cover and simmer 18 minutes or until rice is almost done. Stir in beans. Cook until heated through.
