Spicy Rice And Beans
- vegetable cooking spray
- 1 c. chopped onion
- 1 clove chopped garlic
- 1 c. seeded cubed large green pepper
- 1 (14 1/2 oz.) can stewed tomatoes
- 1 c. defatted chicken broth
- 1 Tbsp. ground cumin
- 1 tsp. chili powder
- 3/4 c. long grain rice
- 1 (16 oz.) can red kidney beans, drained
- Spray a large saucepan with vegetable cooking spray. Add onion.
- Cook over medium heat for 5 minutes, stirring frequently. Stir in garlic and green pepper. Cook 2 minutes longer, stirring frequently.
- Add stewed tomatoes, broth, cumin and chili powder; bring to a boil. Add rice.
- Reduce heat to low.
- Cover and simmer 18 minutes or until rice is almost done. Stir in beans. Cook until heated through.
