Baked Zucchini and Tomato Casserole
- 4 lg. tomatoes, diced
- 2 md. zucchini, sliced
- 1 pkg. Stove Top Stuffing Mix
- 8 oz. cheddar cheese, grated
- Salt, pepper and garlic powder, to taste
- Cut up the tomatoes and put them on the bottom of a greased baking pan.
- Slice the zucchini and place on top of the tomatoes.
- Prepare the Stove Top Stuffing Mix and add to the top of the vegetables.
- Top with the grated cheddar cheese and season with salt, pepper and garlic powder.
- Bake at 350F for 20 minutes.
