Sopaipillas
- 1 c. flour
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1 Tbsp. shorteening
- 1/3 c. warm water
- cooking oil for deep frying
- honey (optional)
- confectioners sugar (optional)
- In a bowl, combine flour, baking powder and salt.
- Cut in shortening until mixture resembles fine crumbs.
- Gradually add water, stirring with a fork.
- The dough will be crumbly.
- On a lightly floured surface, knead the dough for 3 minutes or until smooth.
- Cover and let rest for 10 minutes.
- Roll out into a 12 x 10-inch rectangle.
- Cut into 12 squares.
- In a deep-fat fryer, heat 2 inches of oil to 375u0b0.
- Fry sopaipillas for 1 to 2 minutes per side.
- Drain on paper towels; keep hot in a warm oven.
- Serve with honey or dust with confectioners sugar.
- Serves 6.
