Coffee Raisin Fudge

  1. Combine the Toblerone*, coffee mixture and butter in a saucepan over low heat until smooth and chocolate has melted.
  2. Continue to cook for another 10 minutes, stirring very gently.
  3. (During this time the butter will separate from the chocolate, but it will reabsorb, just keep stirring.)
  4. Remove from the heat and stir through raisins and vanilla essence.
  5. Pour the fudge into a lined 20cm square cake tin and refrigerate until set.
  6. Remove from the tin and cut into pieces.
  7. Serve.
