Mom's Roasted Pumpkin Seeds

  1. Preheat oven to 250.
  2. Pick through seeds, remove stringy fibers.
  3. Bring water and salt to boil, add seeds, boil 10 minutes.
  4. Drain, spread on paper towels, pat dry.
  5. Place seeds in bowl with oil and toss.
  6. Spread evenly on cookie sheet.
  7. Roast in oven 30-40 minutes, stirring every 10 minutes, or until crisp.
