MINUTE RICE Vegetarian Chili
- 1 each: onion, clove garlic, red pepper and celery, chopped
- 1 Tbsp. oil
- 1 (28 oz/796 mL) can stewed tomatoes
- 1 (14 oz/398 mL) can kidney beans, drained
- 1 (12 oz/341 mL) can whole kernel corn
- 2 Tbsp. chili powder
- 1-1/4 cups Minute Rice Brand Rice
- COOK onion, garlic, pepper and celery in oil until tender crisp.
- ADD tomatoes, kidney beans, corn and chili powder.
- Bring to a boil.
- STIR in rice.
- Cover, remove from heat and let stand 5 minutes.
