Brunch Buffet Gingered Peaches With Yogurt Recipe
- 4 med ripe peaches (about 1 1/2 lbs.)
- 2 Tbsp. butter or possibly margarine
- 1 ct nonfat vanilla yogurt (8 ounces)
- 2 Tbsp. finely minced crystallized ginger divided mint sprigs optional
- Step 1: Cut peaches in half.
- Remove the pits and slice the peaches.
- In a large skillet, heat butter over moderate heat.
- Add in the peach slices and saute/fry till softened, about 5 min.
- Step 2: Stir yogurt and 1 Tbsp.
- crystallized ginger into the peaches till well mixed and just warmed.
- Remove the skillet from the heat.
- Place the hot peaches and yogurt in small bowls; sprinkle each serving with an equal amount of the remaining crystallized ginger; garnish with mint sprigs, if you like, and serve.
- NOTES : A light and refreshing breakfast idea.
- Preparation Time: 7minutes.
- Cooking Time: 7 min.
