Coconut Creamiest Pie
- 1 pie shell, baked according to directions, cooled
- 2 cups milk
- 1 (3 1/2 ounce) package instant vanilla pudding
- 1 (3 1/2 ounce) package coconut pudding mix, instant
- 1 cup flaked coconut
- 2 egg whites
- 12 cup sugar
- 34 cup flaked coconut
- Pour 2 c milk and both packages of pudding mix in bowl.
- With mixer or whisk, mix until thickened (about 2 minutes).
- Stir in coconut flakes.
- Pour into prepared pie shell.
- Meringue:.
- Whip egg whites in glass bowl until stiff peaks form.
- Mix in sugar.
- Stir in 1/2 c coconut flakes.
- Spread over pie.
- Sprinkle with remaing coconut.
- Bake in 325 degree oven for 15 to 20 minutes or until lightly browned.
- Keep pie refrigerated.
