Vegetable Meatloaf

  1. Heat oven to 350F.
  2. In 10-inch skillet melt butter until sizzling.
  3. Stir in 1/2 cup onion, 1/2 cup carrot, 1/2 cup celery, 1/2 cup green pepper and garlic.
  4. Cook over medium heat until vegetables are tender (3 to 4 minutes).
  5. In large bowl stir together bread crumbs, 1/2 cup ketchup, ground beef, pork, eggs, salt, pepper, cumin, cayenne pepper and cooked vegetables.
  6. Form into 2-loaves; place in 13x9-inch baking pan.
  7. Bake 40-50 minutes until browned.
  8. Meanwhile, in saucepan stir together remaining onion, carrot, celery, green pepper, 1 cup ketchup and water.
  9. Cook over medium heat until veggies are tender and sauce has thickened slightly.
  10. Serve with meatloaf.
