Reduced Sugar, Whole Wheat Chocolate Chip Muffins
- 2 cups whole wheat flour
- 13 cup light-brown sugar, packed
- 13 cup Splenda sugar substitute
- 2 teaspoons baking powder
- 12 teaspoon salt
- 23 cup 2% low-fat milk
- 14 cup unsalted butter, melted and cooled
- 14 cup extra-light vegetable oil spread
- 2 eggs, lightly beaten
- 1 teaspoon vanilla
- 1 (11 1/2 ounce) package milk chocolate chips
- Preheat oven to 400F.
- In a large bowl, stir together flour, sugars, baking powder, and salt.
- In another bowl, stir together milk, eggs, butter, and vanilla until blended.
- Add milk mixture and combine.
- Stir in chocolate chips.
- Spoon batter into prepared muffin cups.
- Bake for 15-20 minutes.
- Cool for 5 minutes.
- Enjoy.
