Double-Tomato Salad

  1. Arrange tomatoes on platter.
  2. Combine reserved sun-dried tomato oil and 1 tablespoon olive oil in small bowl.
  3. Mix in vinegar.
  4. Drizzle over tomatoes.
  5. Sprinkle with salt and pepper.
  6. Top with sun-dried tomatoes and all remaining ingredients.
