Lobster Rolls

  1. Preheat the grill or broiler.
  2. Using a pastry brush, spread the inside and outside of each bun with melted butter.
  3. Grill quickly to warm through (alternately, place on a baking sheet and run under the broiler).
  4. Remove.
  5. In a bowl, combine the mayonnaise, truffle oil, lemon juice, and salt, and mix well.
  6. Fold in the celery, shallots, chervil, parsley, and chives.
  7. Fold in the lobster meat.
  8. Place 1 bun on each plate and divide the lobster salad among each.
  9. Serve immediately with potato chips.
