Oven Fish ' n ' Chips

  1. Preheat oven to 425 .
  2. In a large bowl, combine oil - pepper.
  3. Cut potatoes lengthwise into 1/2" strips.Add oil mixture , toss to coat.
  4. Place on 15"x10"x1" baking pan.Bake 15 minutes before you put in your fish.Spray your pan first.
  5. Bake 25-30 minutes until golden brown.
  6. Meanwhile, combine flour - pepper in a shallow dish.
  7. In a second dish.
  8. Beat eggs and water.
  9. In a third dish combine cornflakes, cheese and cayenne.
  10. Dredge fish in flour, then dip in egg mixture - roll in crumb mixture.
  11. Place on a baking sheet that has been coated with spray.
  12. ( I used non-stick foil) .
  13. Bake 10-15 minutes or until fish starts to flake.
