Friendly Fried Rice
- Cooking Oil (I like sesame oil for this recipe, but anything will do)
- 6 cups cooked rice (white
- brown)
- Soy sauce, to taste
- Ketchup, to taste
- 1 lg. onion, chopped
- 3 to 4 sm. dried hot red peppers
- 2 to 3 cups frozen mixed vegetables, already cooked
- 1 cake very firm tofu, diced
- 1 to 2 eggs, scrambled
- Salt and pepper, to taste (sometimes I add a little sugar)
- Curry powder, to taste (optional)
- Heat oil over medium to high heat in large skillet.
- Crumble peppers into the oil and let cook briefly.
- Then add and saute onion.
- When onion is mostly tender, add the rice along with soy sauce and ketchup (add more oil if needed, or a little water, to prevent sticking).
- Fry the rice and make sure the soy/ketchup combination lightly colors all of it.
- Add the tofu and any optional ingredients (e.g., water chestnuts) and cook a while longer.
- Then add the cooked vegetables and scrambled eggs.
- Season to taste with salt, pepper, curry and/or sugar.
