Terrine with Captains Table Water Crackers
- 750g pork mince
- 250g beef mince
- 1/2 cup brandy
- 1 small onion, finely chopped
- 2 eggs, beaten
- 2 tablespoons freshly chopped parsley
- 1 tablespoon freshly chopped thyme
- 1 cup fresh breadcrumbs
- 1/2 cup pistachio nuts, chopped
- salt and pepper, to taste
- 8 rindless bacon rashers Rite Aid 2 For $7.00 thru 02/06
- 125g CAPTAIN'S TABLE* Water Crackers
- Mix the pork mince, beef mince, brandy and onion together.
- Add the egg, parsley and thyme, breadcrumbs, pistachios, salt and pepper and mix thoroughly.
- Line a greased terrine dish with half of the bacon rashers.
- Fill with the pork mixture and the remaining bacon rashers.
- Seal the terrine dish with a double layer of foil.
- Place the terrine in a baking dish half filled with water, taking care that the foil does not touch the water.
- Bake for 90 minutes at 180C.
- Remove terrine from the oven and place a weight on the top to press down.
- Refrigerate until cold and firm.
- Serve with Captains Table* Water Crackers.
