Terrine with Captains Table Water Crackers

  1. Mix the pork mince, beef mince, brandy and onion together.
  2. Add the egg, parsley and thyme, breadcrumbs, pistachios, salt and pepper and mix thoroughly.
  3. Line a greased terrine dish with half of the bacon rashers.
  4. Fill with the pork mixture and the remaining bacon rashers.
  5. Seal the terrine dish with a double layer of foil.
  6. Place the terrine in a baking dish half filled with water, taking care that the foil does not touch the water.
  7. Bake for 90 minutes at 180C.
  8. Remove terrine from the oven and place a weight on the top to press down.
  9. Refrigerate until cold and firm.
  10. Serve with Captains Table* Water Crackers.
