Roasted Corn-Lobster Fritters with Poblano-Mustard Dipping Sauce

  1. Poblano-Mustard Dipping Sauce: Combine ingredients in bowl.
  2. Pour half of the sauce into blender; blend until smooth.
  3. Return to remaining sauce in bowl; mix well.
  4. Lobster Fritters: Mix flour, dry muffin mix, sugar and salt; set aside.
  5. Beat eggs, milk, butter and lobster base with wire whisk until well blended.
  6. Add to flour mixture; mix well.
  7. Stir in remaining ingredients.
  8. For each serving: Using #50 scoop to portion out batter for each fritter, fry four fritters at a time in 330 degrees F-deep fryer 2 to 3 min.
  9. or until golden brown.
  10. Drain on paper towels.
  11. Serve with 1/4 cup of the Poblano-Mustard Dipping Sauce.
