Roasted Corn-Lobster Fritters with Poblano-Mustard Dipping Sauce
- Poblano-Mustard Dipping Sauce
- 1 qt. GREY POUPON Classic Dijon Mustard
- 1 qt. poblano chiles, roasted, peeled, seeded and minced
- 2-1/2 cups honey
- 4-1/2 tsp. chipotle chile pepper powder
- Fritters
- 1 qt. flour
- 1 qt. corn muffin mix
- 3/4 cup sugar
- 3 Tbsp. kosher salt
- 6 each eggs
- 3 cups milk
- 3/4 cup butter, melted
- 1 Tbsp. lobster base Walmart Supercenter 1 ea For $12.96 thru 02/14
- 1-1/2 qt. corn, roasted
- - cooked lobster meat, chopped Walmart Supercenter 1 ea For $12.96 thru 02/14
- 1-1/2 cups green onions, finely chopped
- Poblano-Mustard Dipping Sauce: Combine ingredients in bowl.
- Pour half of the sauce into blender; blend until smooth.
- Return to remaining sauce in bowl; mix well.
- Lobster Fritters: Mix flour, dry muffin mix, sugar and salt; set aside.
- Beat eggs, milk, butter and lobster base with wire whisk until well blended.
- Add to flour mixture; mix well.
- Stir in remaining ingredients.
- For each serving: Using #50 scoop to portion out batter for each fritter, fry four fritters at a time in 330 degrees F-deep fryer 2 to 3 min.
- or until golden brown.
- Drain on paper towels.
- Serve with 1/4 cup of the Poblano-Mustard Dipping Sauce.
