Chinese Pepper Steak
- 1 sirloin steak (about 2 lb.; 1 1/2-inches thick)
- 1 or 2 cloves garlic, crushed
- 3 green peppers, thinly sliced
- 1/4 c. soy sauce
- 1 (8 oz.) can tomato sauce
- 6 green onions, cut in 1-inch pieces
- 1 (6 oz.) can sliced water chestnuts, drained
- 1/4 c. peanut or vegetable oil
- 1 tsp. ginger
- 2 sliced onions
- 1/2 tsp. sugar
- Trim fat from the steak and cut in 1/8-inch thick slices (for easier slicing, freeze the steak for about an hour before cutting). Heat the oil in a wok or large pan.
- Add ginger (if fresh ginger is used, use a tablespoon instead of a teaspoon) and garlic.
- Add steak slices and cook rapidly (1 minute or until the meat is light brown).
- Remove the meat with a slotted spoon.
