Lentil Soup with Sausage
- 1 lg. white onion, chopped
- 2 cloves garlic, crushed
- 2 cups lentils
- 1 tbsp. olive oil
- 2 qt. water
- 1 can tomatoes
- 1 bay leaf
- 1 tbsp. salt
- 1/2 tsp. black pepper
- 1/2 lb. summer sausage
- Briefly saute veggies in olive oil for 3-4 minutes.
- Place all ingredients, except sausage, in a large pot and simmer, covered, for about 2 hours.
- Dice sausage without casings and simmer 10 minutes.
- Drain.
- Add to soup 1/2 hour before serving.
- Top with Parmesan cheese.
