Lentil Soup with Sausage

  1. Briefly saute veggies in olive oil for 3-4 minutes.
  2. Place all ingredients, except sausage, in a large pot and simmer, covered, for about 2 hours.
  3. Dice sausage without casings and simmer 10 minutes.
  4. Drain.
  5. Add to soup 1/2 hour before serving.
  6. Top with Parmesan cheese.
