Miso Soup with Sweet Onion and Aburaage

  1. Slice the onion into 5 mm slices.
  2. Pour boiling water over the aburaage to remove the excess oil and slice into 1 mm slices.
  3. Chop the green onion if you have it.
  4. Put the * ingredients into a sauce pan and bring to a boil.
  5. Use only 1 teaspoon of dashi stock powder at this point.
  6. After bringing to a boil, add the onion.
  7. Cover loosely with a lid and steam-cook for about 4 and 1/2 minutes (over medium-high heat).
  8. Add the aburaage and cook for a little while longer.
  9. Turn off the heat.
  10. Add the miso and dissolve.
  11. Add the rest of the dashi stock powder and reheat over medium-high heat.
  12. When the edges of the pan start to bubble, it's ready to serve.
  13. Transfer the miso soup into dishes and sprinkle with chopped green onion.
