Pot Roast With Onions Recipe

  1. Slice the onions.
  2. Heat the oil in a large pot over medium heat and brown the meat on all sides, about 15 min all together.
  3. Add in the onions, the stock, 1 1/2 tsp.
  4. salt and 1/2 tsp.
  5. pepper.
  6. Cover and cook over low heat till fork tender, about 2 hrs.
  7. Remove the meat to a platter and cover it loosely with foil to keep hot.
  8. Skim the fat from the liquid.
  9. Bring to a boil and cook till reduced to 3 c., about 10 min.
  10. Slice the meat and serve it with the reduced broth as a sauce.
