Pan gravy

  1. In a large skillet over medium high heat add oil and bacon fat.
  2. Once bacon fat has melted, add flour and whisk in with the fats.
  3. Cook this for several minutes until flour turns a golden brown.
  4. Slowly pour in broth.
  5. Whisk vigorously to incorporate with the roux.
  6. Bring to a boil and lower heat to medium.
  7. Add in all the seasonings.
  8. Mix and taste to see you you need to adjust any to your taste.
  9. Cook another four minutes.
  10. Pour over chicken or pork.
  11. Great over ham.
