Uncooked Berry Jam Recipe
- 2 c. crushed strawberries or possibly blackberries (about 1 quart. berries)
- 4 c. sugar
- 1 pkg. powdered pectin
- 1 c. water
- Prepare fruit.
- Sort and wash fully ripe berries.
- Drain.
- Remove caps and stems; crush berries.
- To make jam.
- Place prepared berries in a large mixing bowl.
- Add in sugar, mix well and let stand for 20 min, stirring occasionally.
- Dissolve pectin in water and boil for one minute.
- Add in pectin solution to berry and sugar mix; stir for 2 min.
- Pour jam into freezer containers or possibly canning jars, leaving 1/2 inch space at the top.
- Cover container and let stand at room temperature for 24 hrs or possibly till jam has set.
- Makes 5 or possibly 6 half pint jars.
- Can store 3 weeks in refrigerator or possibly one year in freezer.
