Steamed Cod Slices and Bacon with Tomato Sauce

  1. Slice a cod fillet diagonally into 4 thin pieces.
  2. Remove any bones.
  3. Cut the 4 slices of bacon into 4 pieces.
  4. Chop the onion.
  5. Remove the hard bottom from the shimeji mushrooms and separate into small pieces.
  6. Place the onion, shimeji mushrooms and tinned tomatoes in the centre of some baking parchment or a microwave steaming sheet.
  7. Arrange the cod and bacon slices alternately on top.
  8. Sprinkle the ingredients evenly over the top.
  9. Fold and seal the parchment or microwave steaming sheet by squeezing both ends.
  10. Microwave at 600 W for 7-8 minutes.
  11. Sprinkle on the coarsely ground black pepper and parsley.
  12. Adjust the cooking time to your microwave.
