Smoked Chicken and Spinach Pasta
- 300g maccheroni dried pasta (or other small pasta)
- 150g pumpkin, peeled and cut into 1cm cubes
- 4-6 cups hot water
- 1/2 cup KRAFT Easy Cheese Cream Cheese Spread
- 1/2 cup milk
- 1 tablespoon seeded mustard
- 250g smoked chicken breasts, sliced
- 2 spring onions, finely chopped
- 1 cup baby spinach leaves
- salt and pepper, to taste
- 1/3 cup cashews, roughly chopped
- Place pasta, pumpkin and water in a large bowl and cook on HIGH (850W) for 12-15 minutes or until pasta is al dente and pumpkin tender.
- Drain and set aside.
- Combine cheese spread, milk and mustard in medium bowl, heat on HIGH (850W) for 2-3 minutes, stirring occasionally.
- Stir in chicken, spring onions, spinach, salt and pepper, return to the microwave and cook HIGH (850W) for 2-3 minutes.
- Stir cheese mixture and pumpkin into cooked pasta and mix until well combined.
- Serve into bowls and top with cashew nuts.
