Chicken Fried Steak Recipe
- 1 round steak, tenderized by butcher
- 2 Large eggs, beaten
- 1 lg. can evaporated lowfat milk
- 2 c. flour
- Add in about 1 c. of the lowfat milk to Large eggs and beat well.
- Cut meat into serving size pcs, removing all fat.
- Dip meat in flour, in egg-lowfat milk mix and then in flour again.
- Cook slowly (medium heat) till brown and crispy.
- Turn over and cook on other side.
- Season to taste with salt and pepper.
- Remove meat from skillet and add in sufficient flour to drippings to absorb grease.
- Stir well.
- Add in 1 c. cool water and stir.
- Add in balance of the evaporated lowfat milk and stir till thick.
- Season.
- If gravy is too thick, add in more lowfat milk and/or possibly water.
- (Regular lowfat milk will do.)
- This can be varied amount wise by adding more grease to the skillet that will make more gravy by requiring additional flour, lowfat milk and water.
- Serve on meat and potatoes.
