Saffron Whole Wheat Couscous

  1. Place wine and saffron in small bowl, and set aside for 10 minutes.
  2. In small saucepan, bring broth to a boil.
  3. Stir in couscous, apricots, walnuts, parsley and saffron mixture.
  4. Stir to mix well.
  5. Cover, remove from heat and set aside for 5 minutes.
  6. Fluff with fork, and serve immediately.
