Coconut-Pecan Sweet Potatoes
- 2 pounds potatoes sweet, peeled, shredded
- 13 cup sugar brown, packed
- 1/4 cup margarine or butter, melted
- 1/4 cup coconut
- 1/4 cup pecans broken pieces, toasted
- 1/4 teaspoon cinnamon ground
- 1/4 teaspoon coconut extract
- 1/4 teaspoon vanilla extract
- 1 x coconut toasted, optional
- In a 3 1/2 quart slow cooker, combine potatoes, sugar, margarine, coconut, pecans and cinnamon.
- Cover; cook on Low for 6 to 8 hours or on HIGH for 3 to 4 hours.
- Stir in coconut flavoring and vanilla.
- Sprinkle with toasted coconut if desired.
