Coconut-Pecan Sweet Potatoes

  1. In a 3 1/2 quart slow cooker, combine potatoes, sugar, margarine, coconut, pecans and cinnamon.
  2. Cover; cook on Low for 6 to 8 hours or on HIGH for 3 to 4 hours.
  3. Stir in coconut flavoring and vanilla.
  4. Sprinkle with toasted coconut if desired.
