Pizza Roll-Ups

  1. Preheat oven to 425F Line a baking sheet with parchment paper.
  2. CRUST: Combine flour, baking powder and salt in a large bowl.
  3. Cut in shortening until mixture resembles coarse meal.
  4. Add evaporated milk, stirring with a fork until rough dough forms.
  5. Turn out on lightly floured surface and knead until smooth, about 30 seconds.,.
  6. Divide dough into 2 pieces.
  7. On a floured surface, roll each piece into a 16-inch circle.
  8. Cut each circle into 4 wedges.
  9. Spread on tomato sauce, sprinkle cheese and favorite ingredients.
  10. Roll up each wedge tightly from the wider edge inches Place on prepared baking sheet.
  11. Sprinkle with 1 Tbsp grated cheese.
  12. Bake in preheated oven 15 minutes, until crust is golden brown.
  13. Remove from oven and let cool about 5 minutes before serving.
  14. NOTE: Serve some extra tomato sauce to use for dipping.
