Sweet And Sour Meatballs
- 1 1/2 lb. ground beef
- 2 eggs
- 3/4 c. dried bread crumbs
- 1/2 c. club soda
- 1/4 c. minced onion
- 1 tsp. salt
- 2 Tbsp. salad oil
- 2 green peppers, cut into pieces
- 2 carrots, sliced diagonally
- 1 (8 oz.) jar sweet gherkins, drained and cut up
- 1 (15 oz.) can tomato sauce
- 1/2 c. white vinegar
- 1/4 c. sugar
- 1 (20 oz.) can pineapple chunks
- 1 Tbsp. cornstarch
- In 3-quart saucepan, cook salad oil, green peppers and carrots until tender, stirring frequently.
- In Dutch oven, heat to boiling vegetables, gherkins, tomato sauce, vinegar, sugar and pineapple liquid to the meat balls.
- Reduce heat and simmer 15 minutes until meat balls are tender.
- Mix cornstarch with 1/4 cup water. Gradually stir into mixture until thickened.
- Heat.
- Serves 8.
