Turkey, Spinach & Asiago Panini with Garlic-Basil Mayo
- 1/2 cups Mayonnaise
- 4 Large Leaves Of Basil, Finely Chopped
- 2 cloves Garlic, Finely Chopped
- 12 slices Italian Bread
- 2 cups Shredded Asiago Cheese
- 1 pound Sliced Deli Roast Turkey
- 2 cups Fresh Spinach Leaves
- Extra Virgin Olive Oil, For Brushing Sandwiches
- Heat panini grill.
- Mix mayo, garlic and basil in a small bowl.
- Spread a small amount of the mayo mixture on one piece of bread.
- Top the mayo with about a 1/4 cup of cheese and two slices of turkey.
- Cover the turkey slices with spinach leaves and sprinkle with a little more cheese (this will act as glue to keep the other piece of bread from slipping off the sandwich).
- Spread another slice of bread with a small amount of mayo mixture and put on top of the sandwich, mayo side down.
- Brush the outsides of the sandwich with olive oil and grill in the panini grill for 3-5 minutes or until golden.
- Repeat with the remaining sandwiches.
