Marinated Cucumber Salad

  1. Thinly slice the cucumbers.
  2. Place in a colander, sprinkling with the salt between each layer.
  3. Place colander over a bowl and leave to drain for 1 hour.
  4. Under cold running water, rinse the cucumber to remove all the salt.
  5. Pat dry on absorbent kitchen paper.
  6. Add the sugar, cider and the vinegar to a saucepan and heat gently until the sugar has dissolved.
  7. Remove from heat and leave to cool.
  8. Place cucumber slices in a bowl and pour over the cooled cider mixture.
  9. Leave to marinate for 2 hours.
  10. Drain the cucumbers and sprinkle with the dill and pepper (to taste).
  11. Mix well then transfer to a serving dish.
  12. Chill until serving time.
