Tuna Cakes

  1. In a medium bowl, stir together tuna, egg, cilantro, breadcrumbs, mayonnaise, and lemon juice.
  2. Mix together until ingredients just hold together.
  3. Scoop out 1/3 cup tuna mixture and form into patty.
  4. Repeat with remaining tuna mixture.
  5. You should have 8 patties.
  6. Heat olive oil over medium heat in large skillet.
  7. Working in batches, cook cakes until golden brown on both sides, about 2 minutes per side.
  8. Serve hot accompanied with salsa.
