Chocolate Chip Pecan Pie
- 1 each pie shell (9 inch)
- 4 large eggs
- 1 cup sugar granulated
- 1 cup corn syrup, light
- 3 tablespoons vegetable shortening melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 cups pecan halves
- 1/2 cup chocolate chips (semi-sweet)
- 1 tablespoon bourbon
- For crust, prepare but do not bake.
- Heat oven to 375F (190C).
- For filling, beat eggs in large bowl at low speed of electric mixer until blended.
- Stir in sugar, corn syrup, shortening, vanilla and salt with spoon until blended.
- Stir in nuts, chocolate chips and bourbon.
- Pour into unbaked pie crust.
- Bake at 375F (190C) F for 55 to 60 minutes, or until set.
- Cover edge with foil, if necessary, to prevent overbrowning.
- Cool to room temperature before serving.
- Refrigerate leftover pie.
