Lemon Barley Water

  1. Wash and soak the barley in 1 cup of boiled water for 4-6 hours or overnight.
  2. It helps to cook faster.
  3. ~Add 2 cups of water and let it boil in medium low heat for about 10-15 minutes.
  4. ~Add a small piece of ginger.
  5. ~Cook till the barley is soft and mushy.
  6. ~Once its cooked, let it cool, strain and add the fresh lemon juice and honey.
  7. Serve and enjoy ^^ You could also add your favorite juice to it and more honey if you want it sweet.
  8. I like adding more lemon juice and some ice cubes to beat the summer heat.
  9. ~store the rest of the barley water in a tight water bottle and refrigerate.
  10. Stays fresh upto 2 days.
  11. ~The left over cooked barley can be used to make salads, risotto or in stew.
  12. I sautAS it with shallots and butter.
  13. Yummm!
