Peppermint-Fudge Sandwich Cookies

• 1 pkg. (250 g) Philadelphia Light Brick Cream Cheese Spread, softened
• 1 cup thawed Cool Whip Light Whipped Topping
• 1 drop red food colouring
• 1 drop peppermint extract
• 16 chocolate wafer cookies

1. Mix all ingredients except wafers until blended.
2. Spoon onto 8 wafers; cover with remaining wafers.
