Cornmeal Waffles with Spicy Chili

  1. Preheat waffle iron according to manufacturer's instructions.
  2. In a large bowl, combine flour, cornmeal, baking powder, sugar, and salt.
  3. Add milk, oil, and eggs; stirring until smooth.
  4. Pour batter onto hot waffle iron and bake in batches.
  5. Set aside and keep warm.
  6. Serve with Spicy Chili.
  7. Garnish with shredded Cheddar, sour cream and chopped fresh cilantro.
  8. In a large Dutch oven over medium-high heat, brown ground chuck, until beef is crumbly.
  9. Stir in onion, bell pepper, garlic, chili powder, cumin, salt and pepper.
  10. Stir in beans, tomato sauce, corn, diced tomatoes, and green chiles.
  11. Reduce heat and simmer 30 minutes uncovered, stirring occasionally.
  12. Yield: 10 to 12 servings
