Caramel Apple Ice Cream (Ice Cream Machine)
- 1 cup whipping cream
- 23 cup half-and-half
- 23 cup sugar
- 2 teaspoons vanilla
- 1 tablespoon lemon juice
- 3 tablespoons caramel sundae syrup (I use smuckers because it is thin)
- 10 ounces apple pie filling (diced smaller than a chocolate chip)
- 12 cup roasted peanuts (chopped)
- 18 teaspoon salt
- Combine cream, half/half, sugar, vanilla and lemon juice in a bowl and whisk.
- Add caramel sauce to mixture and mix well.
- In a separate bowl, combine chopped apples, peanuts and salt and mix well.
- Place cream mixture in electric ice cream machine and turn on for 25 mintues.
- Gradually add apple/nut mixture at the end of freezing for an additional 10 minutes.
- Transfer to airtight container and freeze for 2 hours before serving.
