Papaya-Tomatillo Salsa
- 1 large papaya, peeled, seeded and diced
- 3 tomatillos, husks removed, diced
- 1/4 cup diced red pepper
- 1/4 cup diced scallion
- 1 garlic clove, minced
- 2 serrano chiles, minced
- 1/4 cup fresh squeezed lime juice
- 3 tablespoons olive oil
- Salt
- 3 tablespoons chopped cilantro
- Combine ingredients in a bowl and toss.
- Cover and refrigerate 30 minutes before serving for flavors to me
