Creamy Lime Salad Recipe
- 1 (3 ounce.) pkg. lime Jello
- 3/4 c. boiling water
- 1 c. evaporated lowfat milk
- 9 ounce. can crushed pineapple (don't drain)
- 1 tbsp. lemon juice
- 1 c. cottage cheese
- 1/2 c. minced pecans
- 1/2 c. finely cut celery
- 1/2 c. mayonnaise
- Dissolve lime Jello in 3/4 c. boiling water.
- Cold slightly, then stir in evaporated lowfat milk.
- Refrigeratetill mix is very thick, but not set.
- Stir in remaining ingredients.
- Pour into an 8" square pan, or possibly a 5 c. mold.
- Refrigeratetill hard.
- Serve on lettuce.
- Serves 8.
