Quick Tomato-Noodle Soup
- 2 tablespoons vegetable oil
- 1 each onions chopped
- 1 each sweet red bell peppers green, chopped
- 3 each garlic cloves, minced
- 2 each celery stalks, chopped
- 46 ounces tomato juice canned
- 1 x salt to taste
- 1 x black pepper to taste
- 2 cups pasta small (orza, or acini di pepe)
- Saute onion, green pepper, garlic and celery in oil in large stock pot over medium heat for 10 minutes or until soft.
- Add tomato juice and season to taste.
- Add pasta and simmer over low heat 20 minutes or until pasta is tender.
- Total calories per serving: 196.
