Low-Fat Fiesta Macaroni and Cheese

  1. Preheat oven to 350.
  2. Saute onions and chicken (cut into bite-sized pieces) until cooked.
  3. Add mac, cheddar and parsley.
  4. Process milk, cottage cheese and seasoning until smooth.
  5. Stir into mixture and salsa into the chicken and mac.
  6. Bake uncovered for about 20 minutes, until slightly browned.
  7. Add about 1/4 cup bread crumbs to top if you like that crusty top.
