Chive & Buttermilk Mashed Potatoes

  1. Peel potatoes, if desired, and cut into 2-inch chunks.
  2. Place the potatoes and salt in a large heavy saucepan.
  3. Add cold water to cover by 2 inches.
  4. Bring to a boil.
  5. Reduce heat to simmer, cover, and cook until potatoes are very tender, 10 to 15 minutes.
  6. Drain well.
  7. Transfer the potatoes to a large bowl.
  8. Mash with a potato masher, an electric hand-held mixer or by working through a ricer.
  9. Stir buttermilk, chives, and pepper into the potatoes.
