Teriyaku Pork Steaks with Shiso Vinegar Sauce
- 200 grams Thinly siced pork offcuts
- 1 dash Salt
- 1 as small amount Pepper
- 1/2 tbsp Sake
- 1 Katakuriko
- 1/2 tbsp Soy sauce
- 1/2 tbsp Mirin
- 1 tsp Sake
- 1 tsp Sugar
- 10 leaves Shredded shiso leaves
- 1 piec Finely juliennned ginger
- 1 1/2 tbsp Rice vinegar
- 1 1/2 tsp Sugar
- 1 dash Salt
- 1 Vegetable oil
- 1 Salad (raw vegetable salad, potato salad, etc.)
- Mix the shiso-vinegar sauces together.
- Mix the teriyaki sauce ingredients together.
- Cut the meat up roughly, season with salt, pepper and sake and massage in the seasonings.
- There's no need to cut the meat if the pieces are around 5 to 6 cm in size.
- Divide the meat into 2 portions and form into flat patties.
- Dust with katakuriko.
- Heat some oil in a frying pan over medium heat and fry the 2 pork patties on both sides.
- Turn the heat down to low, put on a lid and steam-cook until cooked through.
- Turn the heat up to medium-high, add the teriyaku sauce and coat the meat with it.
- Put the pork 'steaks' and salad on plates, and pour the shiso-vinegar dressing over it.
