Teriyaku Pork Steaks with Shiso Vinegar Sauce

  1. Mix the shiso-vinegar sauces together.
  2. Mix the teriyaki sauce ingredients together.
  3. Cut the meat up roughly, season with salt, pepper and sake and massage in the seasonings.
  4. There's no need to cut the meat if the pieces are around 5 to 6 cm in size.
  5. Divide the meat into 2 portions and form into flat patties.
  6. Dust with katakuriko.
  7. Heat some oil in a frying pan over medium heat and fry the 2 pork patties on both sides.
  8. Turn the heat down to low, put on a lid and steam-cook until cooked through.
  9. Turn the heat up to medium-high, add the teriyaku sauce and coat the meat with it.
  10. Put the pork 'steaks' and salad on plates, and pour the shiso-vinegar dressing over it.
