Fruit Roll Up Cookies
- 1 pkg. (8 oz.) cream cheese
- 2 sticks sweet butter unsalted
- 2 egg yolks (reserve egg whites in bowl)
- 2 cups flour
- 3 jars of any fruit pastry
- pie filling
- Sugar
- In large bowl, combine cream cheese, butter until creamy.
- Add 2 egg yolks, gradually add flour.
- Blend with hands and form into one large ball.
- Wrap with saran wrap and refrigerate overnight.
- On a floured board, roll out dough.
- With a knife, make six squares (like a tic-tac-toe board).
- With a tablespoon drop onto one square.
- Roll dough as it looks like a log.
- Dip unfolded side in reserved egg whites and then dip in sugar and lay sugared side up on ungreased cookie sheet.
- Repeat until dough is completely used.
- Bake at 325F for 20 minutes.
