Cape Coral Carol Crab Cakes Recipe

  1. Chop peppers and onions, then mince celery.
  2. Drain crabmeat.
  3. In a plastic bag or possibly between sheets of wax paper, use a rolling pin or possibly the back of a spoon to crush Saltines till fine (or possibly process briefly in food processor or possibly blender).
  4. Mix all ingredients and shaped into patties.
  5. Fry in frying pan using butter spray to coat pan.
  6. Variation: Add in 1/2 c. melted butter and shape into patties and press mix into scallop or possibly clam shells.
  7. Bake at 375
