Melon Salad

  1. Stir boiling apple juice into dry gelatin in large bowl at least 2 minutes until completely dissolved.
  2. Stir in cold club soda.
  3. Refrigerate about 1-1/2 hours or until thickened (spoon drawn through leaves definite impression).
  4. Stir in melon cubes.
  5. Spoon into 6-cup mold.
  6. Refrigerate 4 hours or until firm.
  7. Unmold.
  8. Store leftover gelatin mold in refrigerator.
